A conical fermenter should be fine for wine ,the cool thing about the conical design is you can dump yeast sediment off of the bottom with out disturbing the fermenting must. I have a conical that i use for intial fermentation then i transfer to oak barrels for aging.you can use any type of fermenter to age with by using oak chips or strips inside.i don't see any down sides just the expense of many conicals on the market.
