Allow to ferment for 6 to 10 hours, depending on the weather conditions. The batter will almost double in ten hours. If you stay in a cold place, do not despair. You can wrap the container with an old shawl or keep it in a room where you have the room heater. theyumblog.wordpress.com/ 2007/ 07/ 15/ soft-idly-idlis-chettinad/ Have a look at this link, there's a great blog all about Idli Batter - hope this helps! theyumblog.wordpress.com/ 2007/ 08/ 09/ tips-for-idli-and-dosa-batter/
