Question: My beer fermenter was not airtight ? (Posted by: Gnarbles on 2009-04-04 16:35:17) When fermenting my beer it was not airtight at all.. Should i toss the beer ? Will it make me sick ? |

Posted by: oikos on 2009-04-04, 19:22:48 Heck, no. So long as no bacteria or wild yeasts got in, you are fine. Take a sniff (or a taste) when you rack from the primary to the secondary or before you prime the beer from the secondary. If it smells like vinegar or old band-aids, toss it. If it smells like beer, bottle it. I frequently don't get an airtight seal on my primary. |

If you think about breweries making traditional British beers in large oblong tanks, they never used to have covers over them. the yeast cake that built up on the top gave some protection until the alcohol took over as a natural preservative. If it smells ok then it probably is. I used to own a home brew shop and regularly got asked questions like this and even made my own mistakes like you. I couldn't bring myself to waste the stuff and I am still here (Ok - maybe in an addled and brain dead condition but beyond that, no harm done). Enjoy |
