On occasion I'm out of town for a week or two, what is the longest you should leave the beer in the primary fermenter?

If your primary is plastic, don't leave it for more than two weeks. If glass, you could go a little longer. Plastic gives off-tastes. So does leaving the wort on the spent yeast for too long.

I wouldn't leave it more than a week... more than that, and the yeast will probably be dead and your beer would be flat

The guy who posted first doesn't know what he's talking about. I leave it in the primary for about a month.

I would say 5-7 days. Then I would suggest siphoning to a secondary for clarity. Otherwise, you can bottle. If you leave your beer in the primary too long then you run the risk of decomposing material(grains, etc.) which can give your beer flavors you don't want.

Two weeks is about the longest. After this you risk bad flavors in your beer.

! month and then switch it to a glass carbine. When the fermenting process stops Bottle it.
